This article from GrapplersPlanet.com on Grip Strength is very good. I work on my grip strength all the time. I use a lot of grip strength on both Gi and NoGi.

All the exercises given on the article are very useful and functional for grappling. My take on this is that endurance should be more emphasized than strength and power, because when you train and compete, the duration of the matches are almost always over 5 minutes and if you have more than one match, you'll need that grip strength endurance handy to get a hold of your opponents.
